Borscht

Beetroot gives the Ukrainian-associated version of borscht its deep red colour, while meat or bone stock carries cabbage, carrots, onions, potatoes and tomatoes. The sour soup may arrive with sour cream, a hard-boiled egg or potatoes alongside it.
