The name comes from the sizzling sound rice batter makes when it hits a hot skillet. This crisp fried crepe uses rice flour, water and turmeric, with fillings such as pork, prawns, mung beans and bean sprouts, plus greens, herbs and sweet-sour garlic fish sauce alongside.
