Dolma

The wrapping is a vine leaf, not pastry: it folds around minced meat, rice, onion and herbs. The small rolls arrive warm in a pile, with plain yogurt on the side. In Azerbaijan, dolma is the name for stuffed foods, so the dish’s defining idea is inside the leaf.
